PINT-SIZE BANANA RAISIN PANCAKES
2 medium extra-ripe bananas, peeled 1 egg, slightly beaten 3/4 cup lowfat milk 1 tablespoon vegetable oil 1 cup pancake and waffle mix 1/2 cup raisins 1/8 teaspoon ground cinnamon
Mash bananas (to make 1 cup). Combine bananas, egg, milk and oil; set aside.
Combine pancake mix, raisins and cinnamon. Stir into banana mixture until just moistened.
Pour 1/4 cup batter onto lightly greased hot skillet for each pancake. Brown on underside until bubbles appear on surface. Turn and brown other side.
