What type of ribs did you smoke? Baby backs or Spare Ribs? First, I think you need to get Baby backs and the method that works for me every time to get the meat to absolutely fall off the bone is this:

1. Make sure and remove the membrane
2. Lightly coat ribs with Olive Oil
3. Place Rub on Ribs
4. Start smoker or grill if you don't have a smoker to low. temp (185-200) for 1 and 1/2 hours. Make sure you place ribs bone-side down. Raise temp to med. 225-250 for 2 more hours. Completely wrap ribs in foil, put back on the grill for 1 1/2 to 2 more hours. All of this cooking should be done using indirect heat.

Optional: I sometimes spray the ribs with apple juice but it's not necessary.
